Pancakes are going to be a pretty standard item on the breakfast menu at
the TEOTWAWKI Cafe.  They make for a pretty quick and easy breakfast,
and everyone likes them.

The best syrup to use is real maple syrup.  But, dang, if that isn’t
expensive stuff!  Even if you can afford to stockpile it, it kinda does
take a lot of space.  For those who have neither the budget nor the
room, there are other excellent options.  And, I promise, they all taste
way better than Aunt Jemima’s and Log Cabin’s offerings.

Ideally, you’ll have corn syrup and maple flavoring in your pantry, but if not, don’t worry.  There are options for you, too.

Living in NH tapping Sugar Maples is second nature :-). Please know that several other species of trees can be tapped like Birch Snip:

You see, any species of maple (as well as hickory, birch, alder, butternut, and black walnut trees) will produce sap which—though not so high in sugar content as A. saccharum—can be used for making syrup.

After you’ve done it you know how much work it is if your using wood fire for the reduction part into syrup. A few more 5 gallon pails full of CURRENTLY Cheap Sugar seems worthwhile along with the Colonial Age Sugar Cutters for that soon to be 5 gallon solid block of perfectly good sugar 🙂

So many food items that we take for granted now because they are so inexpensive are soon to become very pricey indeed. Sugar, salt, and chocolate are at the top of my list. Very essential, and very hard to DIY.
