Keto Friendly Chocolate Custard
Eating healthy should be a reward for your body, not a punishment!
Diets tend to feel like a chore if you’re constantly restricting yourself or unable to enjoy the things that truly make you smile.
But we believe you can have your cake and eat it, too!
(Or, in this case, your chocolate.)
If you’re on a healthy eating plan – whether it’s keto or something else – you’ll probably get the urge to treat yourself every now and then.
Your sweet tooth will be begging for just a taste of something to satisfy it.
Instead of sabotaging your entire diet and all the progress you’ve made, why not make a treat that’s good for you? (But tastes like it’s not.)
Enter keto-friendly chocolate custard.
We don’t believe you have to sacrifice flavor for nutrition.
Which is why this keto-friendly chocolate custard is the perfect balance between indulgence and intelligent snacking.
It’s silky and smooth, with a secret ingredient that surprises even the most bone broth-savvy savants.
That’s right: we include bone broth in our chocolate custard recipe.
You’re making a face right now, aren’t you?
Look, we know it’s unconventional.
But we also know that chocolate has this magical way of taking over the other flavors in a dish – so your taste buds don’t even realize you snuck in some nutritious ingredients!
(Trust us, we’ve made the dish several times and no one has ever guessed!)
This recipe is perfect for anyone who is following a keto diet – or just wants to have a little indulgence without going overboard.
More chocolate, less guilt.
Treat yourself now:
Prepare a sous vide water bath (set to 175F)
Bring heavy cream to a simmer. Whisk in dark chocolate baking chips, erythritol, vanilla extract, and salt with the cream. Remove from heat.
In a separate pot, bring bone broth to a boil, reducing while working with the heavy cream. Once reduced, whisk into cream mixture a little at a time.
Whisk in egg yolk one at a time until mixture is smooth. Transfer to pourable measuring cup to easily divide mixture.
Divide into 4-oz mason jars. Screw on lids fingertip tight. Place sealed jars in the water bath.
Cook custards in the water bath for 1 hour. Remove using tongs and place the jars in ice and water to cool.
Set for 2.5 hours, then serve with whipped cream and sprinkle with cacao powder or shaved dark chocolate.
