not sure all the newbies caught the reasoning behind not going the macaroni route VS spaghetti strands >> basically tooooo much void space with hollow type pasta – nothing wrong if you don’t care about the wasted space and extra $$ costs involved with more LTS packaging >>> JUST remember that you need to compensate with additonal CCs of 02 absorbers to handle all that void air – no less than 2500CC for a 5 gallon bucket …

If you presoak your pasta in cold water for around 90 minutes for Durham wheat pasta you will find you can boil it up much like fresh made pasta in about a minute. I find putting it into the cook pot I was going to boil the pasta works fine.
Worked very well when I had a power outage and was cooking on my Gas Grill.
If you use hot water for the soak you’ll get gummy pasta as the starches are activated as like in cooking.
Remember to save some of that starchy soaking-cooking water for the Sauce. As the Italians say mangiare bene
I always pre-soak the pasta now. I wrote a post on that a while back, but forgot to include it in the links.
You lucked out when your husband bought the Delallo pasta. It’s pretty high quality stuff. We used to go to the Delallo store on Rt 30 in Jeanette, PA when we lived in the area to buy real, imported meat and cheese. Your mouth would water as soon as you would walk into the place. They have been around at least since the 1950s and maybe even further back. People would come from 50 or more miles around to shop there. They started their own product line a few decades back to include pasta. I’m really surprised that it was found in your area. They must be trying to expand their business….
Unfortunately, while we got all they had discounted, it was only a little. I used to see it in the store once in a while, but that was pre-COVID.
